Just Because

As I’ve said before, in times where it feels the world is going crazy, it’s nice to just make myself a nice dinner. The other night, I decided to indulge my curiosity about cooking fish in foil and just f-ing do it. I am so glad I did. This was a cinch to make and just so delicious.

mahi mahi with brussels sproutsI used a thawed frozen mahi-mahi fillet (I dig the Whole Foods vacuum-packed fillets for busy weeknights) and used some sea salt, pepper, rosemary, and a generous sprinkle of garlic gold nuggets for seasoning.

Directions:

  1. Preheat oven to 400 degrees F. Rub 1 tsp olive oil on fish. Place on foil, presentation side down. Season as desired. Wrap ends of foil to make a little pouch.
  2. Cook ~25 minutes or until done. Unwrap foil and serve.

I served mine over some leftover shredded brussels sprouts that had been sauteed in olive oil with shallots and then drizzled some tahini over the whole operation. It was everything I’d been hoping for and more.

Glad I got over my fish-in-foil fears. This sh!t is just too easy and delicious to not make a regular thing.
