What I Ate Wednesday # 112

Is it just me or is this week flying by? Suddenly it’s  What I Ate Wednesday again! Thank you as always to the lovely Jenn of Peas & Crayons for hosting the weekly link part. Take a visit to see more WIAW from other bloggers!

Since I wasn’t sure if I’d be too busy to snap pictures this week, I wanted to share some weekend eats. Here’s what I ate on my “artist date” Saturday, between fun excursion.

  • Breakfast: apple spice oatmeal with PB and fig & ginger preserves
  • Lunch: spinach & mushroom egg white omelette with a side salad and toast with cottage cheese & nutritional yeast
  • Snack: Greek yogurt with puffed millet and sun butter
  • Dinner: whole wheat rotini with grilled chicken, kale, butternut squash, and goat cheese; a glass of wine
  • Snack: banana with PB2 and shredded coconut (a recent Whole Foods bulk bin purchase)

    Great eats! This week is moving right along for me too. The best thing I’ve eaten lately was probably the bbq I had over the weekend.

      Stonewall Kitchen has so many awesome flavor combinations, but this is by far my favorite. So good!

    Mmm now I want some pasta with goat cheese! That omelet looks great too. I always want something sweet for breakfast so don’t usually make omelets, but that’s a great idea to make it for lunch!

      I started making eggs for lunch a few years ago—totally hits the spot. I also make eggs for dinner quite a bit too.

    It all looks pretty delicious, and I dig the sound of the fig and ginger preserves because I like pretty much anything involving figs.

    the oatmeal looks perfect! but i think i’d prefer the wine.. i guess 7:20 am is a little too early to get started.

    mmm your oatmeal looks amazeballs, best thing I have eaten this week would probably be the proats I had this morning, apple pie eggy proatmeal with a broken up cinnamon quest bar, raisins and wf syrups. Mmm preworkout fuel. Oh and the cheat/treat coconut ice cream with a quest craving I’m planning for tommorrow 😉
