What I Ate Wednesday #90: Christmas Edition
Happy What I Ate Wednesday. Since this happens to be the day after Christmas, here’s a little glimpse of what I enjoyed over the holiday. As always, thanks to Jenn for hosting the weekly link party. To see more WIAW from other bloggers, visit Peas & Crayons.
I was way too sick last Christmas to be of any help, so I’d kind of forgotten how labor-intensive it is. I feel like I’ve been fighting something all month but have been able to keep my head above water for the most part. Unfortunately, my mom was the sick one this year, so my sister, dad, and I all pitched in. I felt like I was on my feet nonstop. After cooking, cleaning, and running errands all day Monday, I cleaned up sorta nice for dinner. I don’t know why, but after years of doing the wavy hair thing, I’ve been enjoying wearing it straight lately.

Speaking of dinner, here’s what I ate on Christmas Eve…
Breakfast: I made pumpkin-banana oatmeal for my sister & I, topped mine with peanut butter and crumbles from a reject gingerbread cookie
Lunch: Homemade ceviche with avocado over spinach; a leftover piece of sushi; an (unpictured) square of dark chocolate
Snack: Plain Greek yogurt with raspberries (not worth a picture)
Appetizers: Cranberry kombucha; a sampling of the sushi & bacon-wrapped goat-cheese-stuffed prunes
Dinner: Typical Christmas Eve Greek stuff—lamb & spinach pie—along with brussels sprouts (with turkey bacon per Mom’s request), salad, and a spanikopita-style potato pancake recipe my sister found
Dessert: a repeat of the amazing flourless chocolate torte we had at Thanksgiving

Christmas Day was also full of delicious things at my aunt’s house, but I needed a break from my cellphone/camera. It was nice to see my family, but wow—I feel like I need a mini-vacation from my mini-vacation. In some twisted way, I’m looking forward to going back to work, if only because there won’t be any dishes to wash at the hospital.

Cookies are my favorite treat, so I love having all the vegan Christmas cookies I make around on trays for two days. And this year my mom made a killer spinach salad.
