What I Ate Wednesday #81

Another week, another What I Ate Wednesday. As always, thanks to Jenn for hosting the weekly link party. To see more WIAW from other bloggers, visit Peas & Crayons.

Since I’m not working this coming weekend, I’m super-excited to have reached the halfway-point of this week!

I feel like Monday had it in for everybodyI talked to—so many travel snafus, a locked employee locker room, technology problems…I was glad I’d taken a day off from the gym, since I ended up having to run around so damn much to hold the day together and get my work done. I also had a nice little contact lens emergency and had to make time to stop home before class to change into my glasses. There are worse things, though—at least it gave me a few minutes to breathe, change, and grab a much-needed snack to get me through an evening lecture on vitamin B6 and iron.

Overall, I enjoyed everything I ate Monday. Some days (especially the busy ones) I feel very “eat to live,” with an appetite that gnaws, so it’s a plus when everything is really tasty.

Breakfast: Oatmeal with chia seeds, banana, and non-fat ricotta, topped with chocolate PB2. This was filling but way too sweet. My taste-buds have changed so much in the past year or so. Once upon a time, this would not have been sweet enough at all. 

Lunch: Cafeteria salad (nothing special, but tasted weirdly good today-maybe because I was so hungry); Trader Joe’s peanut butter sandwich crackers; green tea 

Snacks: grapes, Greek yogurt  with some cereal 

Dinner: Veggies and shrimp in tomato sauce topped with goat cheese; sprouted grain toast with hummus and roasted pepper 

Dessert: Dark chocolate with ginger. So freaking good. I have a new favorite.

    I’m sorry you had a wonky Monday but filled with tasty food. Plus, I’m with you on feeling “eat to live” as in not stressing about food but just seeing it as delicious fuel on busy days.

    I totally hear you on things seeming to sweet in my ‘old’ age. I’m totally okay with that though, considering I used to be able to stomach post-drinking twizzler and oreo feasts with pals in our dorm rooms. Good riddance to stomaching the sweet stuff!
