Unofficial Pumpkin Theme

Last night’s dinner had an unofficial pumpkin theme. After making a pot of black bean and pumpkin soup, I stumbled across Ashley’s recipe for a single-serving pumpkin cornbread you can make in the microwave.

Obviously, that had to happen.

It was the perfect cold-and-rainy-night meal, maybe or maybe not with a little Tom Waits on the side. I really can’t help myself sometimes.

    That looks so delish! We are finally carving our pumpkins this weekend and I plan to roast the seads with a little seasalt. YAY for pumpkin! Stay warm!

    I made Ashley’s bake for breakfast this morning, but I LOVE the idea of having it with soup!! I may just have to try it again with some sweet potato chili tonight.
