Roasted Beets

This was one of my favorite lunches I’ve had in a while—and it only cost me $1.99! These roasted beets were everything I wanted them to be and went so well with a lentil walnut burger (complete with greens, tomato, and avocado) and salad.

For the beets:

  • 1 lb beets
  • 1 T olive oil
  • Salt, pepper, and/or rosemary

Directions:

  • Preheat oven to 400 degrees F.
  • Cut beets into wedges.
  • Toss with olive oil and seasonings.
  • Line a baking pan with foil. Spreads beets over foil.
  • Cover with more foil and bake 1.25 – 1.5 hours.

Ah-mazing. I was a very happy girl after this meal .
